The Fiber Limits
This is where the trade-off arrives. Alkalinity attacks protein.
Wool is a protein fiber, structurally closer to hair than to plastic. Strong alkali degrades the bonds that give it strength, producing yellowing, a harsh feel, and permanent loss of durability. Wool should be cleaned in roughly a pH 5 to 8 range and at moderate temperature, and it should never see oxygen bleach or high heat. Silk in area rugs has the same constraint.
Nylon handles higher pH, but stain-resist finishes are degraded by repeated strongly alkaline cleaning. Those finishes work by occupying dye sites, and losing them is invisible until the next spill does not bead up.

Two reasons, and both matter.
First, leftover alkalinity keeps working on the fiber long after the technician leaves. On wool that is damage; on nylon it is accelerated wear of the stain-resist finish.
Second, alkaline residue attracts soil. The carpet looks excellent for two weeks and then greys faster than it ever did before, and the homeowner concludes the carpet is worn out.
The professional answer is an acid rinse -- typically around pH 4 to 6 -- which neutralizes the leftover alkalinity through an actual chemical reaction rather than diluting it. For a grease spot, blot first, never rub -- rubbing drives oil deeper and distorts the pile. Use a small amount of a mild alkaline cleaner or a dish detergent solution, give it a few minutes to work, then blot and rinse with plain water and blot dry.
