What Heat Tint Actually Is

Stainless steel resists rust because chromium in the alloy reacts with air to form an invisible chromium oxide layer on the surface. That layer is what makes stainless stainless.

When you heat the pan, that oxide layer thickens slightly. Once it passes a certain thickness it starts interfering with light, the same way a soap bubble or an oil slick shows color. The blues, purples, and golds you see are that interference effect, not pigment.

The thicker the film, the further along the color scale you go, which is why the hottest part of the pan usually shows the deepest blue. How Do You Get Heat Tint Off a Stainless Pan?

Pour a small amount of white vinegar or lemon juice into the cool pan, spread it over the tinted area with a soft cloth or a nonabrasive sponge, and let it sit one to two minutes. Wipe, rinse, and dry. The color disappears because a mild acid dissolves the thickened oxide film.

If vinegar alone does not finish it, a mild powdered or cream cleanser rubbed on with a damp nonscratch pad will. Work with the grain of the metal, not in circles, so any faint scratching follows the existing brushed finish.

Rinse thoroughly. Acid left on stainless does not help anything once the tint is gone.

What Not to Use

Chlorine bleach is the important one. Chloride attacks the passive layer on stainless steel and causes pitting, which is real, permanent damage, unlike the tint you are trying to remove.

Never combine bleach with vinegar or any other acid, since that releases chlorine gas, and never combine it with ammonia, which is in many glass cleaners, since that releases chloramine gas. There is no version of this job that needs bleach at all.

Steel wool and heavy scouring pads are also a poor trade. They will remove the tint, but they leave a scratched surface that dulls the pan and holds soil. Use a nonscratch pad and a mild cleanser instead.

Why Does One Pan Tint and Another Does Not?

Preheating empty and cooking over high heat both drive tint. A pan preheated dry on high hits a much higher surface temperature than one with oil or food in it, since food absorbs energy. Thinner pans and gas burners with concentrated flames tint faster than heavy pans on even heat.

Preventing Tint in the First Place

Preheat on medium rather than high, and add oil early so the surface has something absorbing heat.

Do not leave an empty pan on a burner while you prep. That is where the deepest tinting happens, and it also runs the risk of warping a thin pan.

Match the burner to the pan base. A flame licking up the sides of a small pan heats the walls far beyond what the food ever needs, and the walls are where the rainbow usually shows first.
