Strip the bed completely. Then pull the mattress six inches away from the headboard, or take it off the frame entirely if the panel needs real work.
Lay a drop cloth or old towels along the top of the mattress and the side rails. On a vertical panel, gravity does what gravity does -- anything you apply runs down toward the mattress, and a wet mattress is a much bigger problem than a dirty headboard.
