Coffee Oil Is the Enemy, Not Coffee Grounds

Grounds rinse away. Coffee oil does not. Roasted coffee carries a meaningful fraction of its weight as oil, and espresso extraction under pressure drives that oil into every screen, gasket, and basket hole in the brew path.

Within days that oil oxidizes and turns rancid. The result is a sour, ashy edge in the cup that no grind adjustment fixes, because the problem is downstream of the coffee.

What Do You Do After Every Shot?

Knock the puck out, wipe the basket with a dry cloth, and run a two second flush of water through the group head to clear grounds off the dispersion screen. Wipe the group gasket with a cloth or a group brush. Rinse the portafilter under hot water and put it back in the group to stay warm.

Do not leave the portafilter sitting with a spent puck in it. The puck dries into a compacted disc and takes real effort to remove later.

How Do You Backflush an Espresso Machine?

Backflushing means fitting a blind basket, one with no holes, into the portafilter and running the brew cycle so pressurized water is forced backward through the group. Do a plain water backflush of several short cycles daily, and a detergent backflush once a week using a small measure of espresso machine cleaner in the blind basket.

After a detergent backflush, run five to ten plain water cycles and then discard the first shot. Detergent residue tastes worse than the oil it removed.

Soaking the Portafilter, Baskets, and Screen

Once a week, dissolve espresso machine cleaner in hot water and soak the baskets, the shower screen if it removes, and the portafilter basket housing for fifteen to thirty minutes. Do not submerge the portafilter handle, since a wooden handle will swell and a plastic one can craze.

Scrub the basket holes with a soft brush and hold the basket up to a light. If the holes are not evenly bright, the basket is still blocked and flow will be uneven.

Rinse everything thoroughly. Espresso detergents are alkaline and leave a soapy taste if any is left behind.

Checking and Replacing the Group Gasket

The group gasket is the rubber ring the portafilter seals against. When it hardens, the portafilter starts sitting further past center on lockup, and shots begin to leak or squeal around the edge.

Clean the gasket seat with a group brush every day. When the gasket cracks, flattens, or leaks despite a clean seat, replace it. Cleaning cannot restore rubber that has cured hard from heat cycling.

Keep the shower screen clean at the same time, since a screen crusted with oil distributes water unevenly and channels the shot.

Descaling Is Not Cleaning

Descaling removes mineral scale from the boiler and water lines with an acid, usually citric acid or a proprietary descaler.
