How to Clean a Flour Sifter and a Fine Mesh Sieve Screen.

Why a geared flour sifter should never be soaked, how to dry brush a clogged screen, and the safe way to wash a fine mesh sieve without denting the mesh.

Flour plus water equals paste

This is the single fact that makes sifters different from every other strainer in the kitchen. Dry flour brushes off. Wet flour becomes a dough that hardens into something closer to a glue.

A crank sifter has a rotating agitator, a spring or gear at the pivot, and a screen. Water carries flour into all three, and the paste that forms there does not rinse out -- it dries hard and locks the mechanism. Rust follows, because the spring and axle are usually plain steel.

That is why an old crank sifter that has been washed once usually never works properly again. The mechanism is not broken; it is full of set flour and corrosion.

How do you clean a flour sifter?

Dry brush it first. Tap out loose flour over a trash can, then work a dry pastry brush or clean paint brush across both faces of the screen and around the agitator to clear the rest. For a crank sifter, that is the whole cleaning method -- do not wash it.

When can you wash a sifter?

A plain sieve-style sifter -- just a screen and a rim, no gears, no spring, no wooden handle -- can be washed. So can a stainless one-piece sifter with a simple lever.

The test is whether every part can be fully dry within an hour. A rolled rim, a riveted joint, or a coil spring cannot, and those are the parts that rust.

If you do wash a simple sifter, use hot soapy water, a soft brush on the outside face only, and a strong hot rinse from the underside. Then air dry it somewhere warm with air movement -- upright on a rack, not flat on a towel.

Some people put a washed sifter in a low oven or a still-warm oven that has been turned off to finish drying. That is reasonable for an all-metal sifter with no plastic or wooden parts, and it is exactly the approach used for how to clean cookie cutters.

Fine mesh sieves: the mesh is the fragile part

A fine mesh sieve is woven wire, and woven wire dents and stretches. Once a section is deformed it never sits flat again, and it lets solids through in the same spot every time.

Clean it upside down. Hold the sieve inverted under a strong hot stream so water pushes debris back out the way it entered. Most of the job is done at that point.

For the rest, use a soft brush on the outside face only, moving lightly. Never scrub the inside of the mesh hard, never use a wire brush, and never push a spoon or spatula through the screen to clear it.

Sticky loads -- nut butter, fruit puree, custard, ganache -- get a ten to fifteen minute soak in hot soapy water first, then the inverted rinse. The soak does the work so the brush does not have to. The same inside-out principle governs how to clean a colander and strainer.

Rust, and the seam nobody sees

A fine mesh sieve joins mesh to rim at a crimped or soldered seam, and that seam holds water by capillary action. It is where rust starts on almost every sieve.

Dry it deliberately. Tap the water out, then stand it on edge or hang it so the seam drains rather than sitting in a puddle. Fifteen to twenty minutes of air is enough.

If light rust has already formed at the seam, scrub it gently with a baking soda paste on a soft brush, rinse hot, and dry thoroughly. Do not use chlorine bleach, which pits stainless steel, and do not use steel wool, which leaves iron particles that rust in place and can tear fine mesh.

Odor and old flour

Flour goes rancid, especially whole wheat flour, which contains oils from the germ. A sifter or sieve stored with residue in it can pick up a stale smell.

The fix is thorough dry brushing plus proper storage rather than washing. Brush the screen out completely, then store the tool sealed.

For a sieve that has been washed and still smells, a hot soapy wash followed by full drying usually resolves it. A baking soda paste on the outside face handles anything that lingers. Avoid vinegar soaks on tools with aluminum rims, which pit in acid.
