What is the right way to clean a can opener?
Wash it in hot soapy water with a stiff brush, working the bristles into the toothed gear wheel and along both faces of the cutting disc. Turn the crank while brushing so every tooth rotates past. Rinse hot, then dry the mechanism fully so the pivot does not rust.
Manual openers: turn the handle while you brush
The mechanism only exposes about a third of the gear wheel at a time. Brushing what you can see leaves most of the teeth untouched.
Hold the opener under hot running water and turn the crank slowly while you work the brush against the wheel. Every rotation brings a new set of teeth into contact. Do the same for the cutting disc, which spins on its own axle.
An old toothbrush is the right size for this. A dish brush handles the body and the handles. For anything wedged in a tooth root, a wooden skewer or toothpick clears it without scratching.
The cutting disc is a blade. It is not as sharp as a knife, but it is sharp enough, and it is easy to run a fingertip into while focused on the gears. Hold the opener by its handles, not by the head. Electric can openers: never submerge the base
An electric opener is a motor in a housing. The housing does not go in water, does not go in a dishwasher, and does not get rinsed at the sink.
Most models have a removable cutting assembly or lever arm -- check the manual, since the release varies. That removable piece washes by hand in hot soapy water with a brush, exactly like a manual opener's head.
For the housing, unplug it first, then wipe it with a cloth dampened with hot soapy water, then wipe again with a clean damp cloth and dry it. Get into the recess where the can rides, which collects drips. Keep water out of the switch and out of the shaft opening where the drive gear enters the body.
If the cutting assembly does not detach, work a small brush and a damp cloth around it with the unit unplugged, then dry it. Do not run water over it.
Rust, and what to do about it
Surface rust on a cutting disc or gear wheel is common on openers that were put away wet. A little rust on a food-contact blade is worth taking seriously.
Scrub it with a baking soda paste on a stiff brush or a nylon pad, rinse hot, dry completely, and inspect. If the rust is a light freckling and comes off cleanly, the tool is fine. If the disc is pitted, flaking, or leaving orange marks on cans, replace the opener -- a pitted blade cannot be cleaned reliably and it makes ragged cuts.
Skip chlorine bleach. Chloride pits stainless steel, and on a plated carbon steel disc it accelerates the rust you are trying to remove. Skip steel wool too, which leaves iron particles that rust in place.
A drop of food-grade mineral oil on the pivot after drying keeps a manual opener turning smoothly. Do not use cooking oil, which goes rancid and gums up.
A simple habit that solves most of this
Wipe the can rim before opening. Most of what ends up in the gear wheel came off a dusty, drippy rim in the first place.
