Two completely different mechanisms

Enzymes are biological catalysts. Each type digests a specific class of molecule. Protease breaks down protein. Amylase breaks down starch. Lipase breaks down fat. Cellulase handles plant fiber. They chop large soil molecules into smaller, water-soluble pieces that rinse away.

Enzymes are selective. Protease does nothing to a coffee stain, because coffee is not protein.

Oxidizers destroy the part of a molecule that produces color. They attack the chemical structure responsible for absorbing light, so the stain does not lift out so much as stop being visible. Oxygen bleach, which is usually sodium percarbonate releasing hydrogen peroxide in water, is the common household version.

Oxidizers are indiscriminate. They will act on the fabric dye as readily as on the stain if conditions are wrong.

Which stain remover should you use?

Match the chemistry to the stain source. If it came from a living thing -- blood, sweat, food, grass, pet accidents -- reach for an enzyme product. If it stains by color -- coffee, tea, wine, juice, dinginess -- reach for an oxygen-based product. Complex stains often need both, in sequence.

Enzyme conditions, which are strict

Enzymes are proteins, and heat destroys them.

Cool to warm water only. Hot water denatures enzymes and stops them working. This is the single most common enzyme mistake.

Dwell time is mandatory. Enzymes work slowly. Fifteen minutes is a minimum, and several hours is often better. Spraying and immediately wiping wastes the product.

The surface must stay damp. A dried enzyme product does nothing. Cover a treated spot with a damp cloth for long dwells.

No bleach in the same step. Chlorine bleach destroys enzymes on contact.

Protein stains need cold water. Hot water cooks protein into the fiber and sets the stain permanently. Blood, egg, milk, and vomit all follow this rule -- cold water first, always.

Enzyme products also lose potency in storage, especially if they get hot. An old bottle that has sat in a warm garage may be doing nothing.

Oxidizer conditions, which are different

Oxygen bleach behaves in almost the opposite way.

Warm water activates it. Sodium percarbonate needs warmth to release peroxide efficiently. Cold water slows it considerably.

Dwell time is also required. One to six hours for a soak, though check the fabric periodically.

Mix fresh. Once dissolved, an oxygen bleach solution loses strength within hours. Mixing a batch to store is pointless.

Matching the stain to the chemistry

Enzyme first: blood, egg, milk and dairy, vomit, urine, feces, sweat and body oil, grass, most food soils, gravy and sauces with fat or protein in them, baby formula.

Neither, use a solvent or surfactant: motor oil, wax, ink, adhesive, paint, cosmetics, and pure grease. These need something that dissolves them rather than digests or decolorizes them.

Both, in sequence: many real-world stains are mixed. A spaghetti sauce mark is fat and protein plus tomato pigment. Treat with the enzyme first at cool temperature, rinse, then apply the oxidizer with warm water. Never combine them in one container, since the oxidizer will destroy the enzymes.

The rules that matter more than the product

Blot, do not rub. Rubbing drives the stain deeper into the fiber and can abrade the surface.

Work from the outside in. This stops the stain spreading into a larger ring.

Cold water first for anything biological. Always. Heat sets protein permanently.

Test in a hidden area. Every time, on anything you care about.

Never put a stained item in a dryer. Heat sets whatever remains, and a stain that survives a dryer cycle is usually there for good.

Rinse fully between products. Do not layer a second chemistry over the first.

Safety, stated plainly

Work with ventilation, wear gloves for extended contact, and keep products in their original labeled containers.

The verdict, with conditions

Reach for an enzyme product if the stain came from a living thing. Use cool water, give it fifteen minutes at minimum, and keep it damp.

Reach for an oxidizer if the stain is a color. Use warm water, mix fresh, and check the fabric periodically during a long soak.

Use both, in sequence, if the stain is mixed -- enzyme first at cool temperature, thorough rinse, then oxidizer at warm.
