What vinegar actually does to stone

That mark is called an etch. It is not dirt sitting on the surface, so no amount of scrubbing removes it. A layer of stone is simply gone, and what is left scatters light differently than the polish around it.

How to tell whether you have already caused damage

Look at the counter from a low angle with a light behind you. Etches show up as dull patches that break the reflection, often in the shapes of splashes, drips, or the ring left by a glass.

Run a fingertip across one. An etch usually feels very slightly rougher or softer than the polish next to it. A stain, by contrast, feels identical and looks darker rather than lighter.

Water absorption tells you about the sealer. Put a quarter-sized puddle of water on the stone and wait fifteen minutes. If the area darkens, the sealer is worn and the stone is drinking. Reseal with an impregnating sealer made for natural stone.

Can vinegar etching be fixed?

Keep a cutting board in the prep zone and a tray under oils and vinegars. Bottles drip, and a slow drip on stone leaves a ring you will see forever.
