Cleaning: the step that does most of the work

Sanitizing is also what a dishwasher does on a rated cycle, and what hot water in a commercial three-compartment sink does. It is a reduction, and it is honest about being a reduction.

Disinfecting: a tested kill against a named list

A disinfectant is registered, which means the claims and the directions were reviewed before the label was allowed to say what it says. The back label carries a registration number, a list of the organisms the product was tested against, and a required contact time.

All three of those matter. An organism that is not on the list was not tested. A contact time of ten minutes is not satisfied by a wipe that dries in thirty seconds. Remove dry debris first, so a wet cloth does not turn crumbs and dust into paste. Wash with detergent and water. Rinse, because the residue left behind is itself soil and it attracts more.

Use a second cloth for that step rather than the one loaded with detergent. Let it air dry unless the label says to rinse, and follow the label rather than habit on food surfaces.
