Both are acids doing the same job

Limescale is calcium carbonate deposited when hard water evaporates or is heated. An acid reacts with it and converts it into water-soluble compounds that rinse away.

Vinegar is a dilute acetic acid solution, typically 5 percent in household white vinegar. Citric acid is a solid crystalline powder derived from citrus fermentation, dissolved in water at whatever concentration you choose.

Where citric acid pulls ahead

Strength per application. Because you control the concentration, a citric solution can be considerably more aggressive on scale than 5 percent vinegar without being harsher on materials.

Odor. This is the practical advantage people notice first. Descaling a kettle or coffee maker with vinegar leaves a smell that takes several rinse cycles to clear, and sometimes taints the first pot afterward. Citric acid is essentially odorless.

Rinse-out. Citric solutions rinse more completely, with less residual taste in anything that heats water.

Seal compatibility. Acetic acid degrades rubber and some plastics over repeated exposure. Citric acid is gentler on gaskets, hoses, and seals, which is exactly why many appliance manuals allow it and prohibit vinegar.

Storage. A bag of citric acid powder is compact and shelf-stable, and it makes many times its volume in solution.

Where vinegar holds its own

Cost and availability. It is already in the cupboard, costs very little, and needs no measuring.

Light scale. For a faucet aerator, a showerhead, or a mildly filmed glass, vinegar is entirely sufficient.

Soaking small parts. Drop an aerator in a cup of vinegar overnight and it will be clean.

Familiarity. Everyone knows how to use it, and there is no mixing step.

How to use citric acid

For maintenance descaling, roughly one to two tablespoons of citric acid powder per quart of warm water is a common starting point. For heavy scale, roughly double it.

Warm water works considerably better than cold, because the reaction speeds up with temperature. Do not boil a citric solution in an appliance unless the manual says to.

Give it time. Twenty to thirty minutes handles most maintenance, and a few hours suits heavy deposits. Watch for fizzing to stop, which indicates the reaction has finished.

Rinse thoroughly, several times, especially in anything that produces drinking water or food.

Wear gloves for extended contact and keep it out of your eyes. Citric acid is food-grade and still an acid.

The surfaces and appliances to keep both away from

Rubber gaskets and seals. This is the specific reason many appliance makers prohibit vinegar. Repeated acetic acid exposure hardens and cracks the seals in coffee makers, espresso machines, dishwashers, and washing machines, and that damage is often not covered under warranty.

Aluminum. Acids pit and discolor it.

Cast iron. Acid strips seasoning and promotes rust.

Unlacquered brass and some plated finishes. Acids strip the finish.

Grout. Repeated acid exposure erodes cement grout.

Steam irons and some espresso machines. Many have internal components that specifically require a proprietary descaler. Follow the manual, because the wrong product can void a warranty and damage the machine.

Application notes by appliance

Kettles. Either works. Fill, soak, boil if the manual permits, rinse well.

Dishwashers and washing machines. Check the manual. Many now specify a purpose-made cleaner, and vinegar is frequently prohibited because of the seals and hoses.

Faucets and aerators. Unscrew the aerator and soak it rather than wrapping the whole fixture, which reduces contact with the finish.

The safety rule that overrides everything

Never combine any acid with chlorine bleach. Vinegar plus bleach, or a descaler plus a bleach-based cleaner, produces chlorine gas. This is a common and serious household accident, and it almost always happens when someone escalates after a first product failed.

Never mix an acid with ammonia-based cleaners either, and never combine hydrogen peroxide and vinegar in one container. If a first product did not work, rinse the surface fully with plain water before trying another.

Work with ventilation, especially in a small bathroom.

Scale keeps coming back for a reason

Descaling treats the deposit. It does not change the water.

Use citric acid if you are descaling anything with heating elements, seals, or hoses -- coffee makers, kettles, espresso machines, dishwashers, washing machines -- or if smell and rinse-out matter. Mix to the strength the job needs.

Use vinegar if the job is a faucet aerator, a showerhead, a glass surface, or light scale anywhere, and you want to reach for something already in the cupboard.

Use neither if the surface is natural stone, aluminum, cast iron, or an unknown metal finish, or if the appliance manual specifies a particular product. The manual always wins.

Do not escalate by mixing. Rinse, then try a different product on its own.
